Soybean Butterbur Salad
된장 머위 나물
Ingredients :
*1Tablespoon = 15g / 1Teaspoon = 5g / 1Cup = 200g
Butterbur : 200g
Soybean paste : 1tablespoon
Perilla oil : 1tablespoon
Minced garlic : 1teaspoon
Sesame salt : 1tablespoon
How to Make it :
Peel the skin off from the stem part of the butterbur and wash through the water.
Start boiling water in a pot and as soon as it starts to boil, add 1teaspoon of salt in the boiling water and turn off the heat. As soon as turn off the heat, add the butterbur into the pot and slowly stir and press the butterbur under the water until it is softened. If you are only cooking the leaves, just put it in the boiling water for about 30 seconds and take it out.
After parboiling the butterbur, take it out and wash it through the cold water one time and squeeze lightly to remove the excess water. Then scatter the butterbur and put it to the side.
Mix the butterbur with the soybean paste and the minced garlic first and then add the perilla oil and the sesame salt and mix all together.
